The Basil & Rosemary Shrub

Before you make this cocktail, you need to make the Shrub itself. Take 100g basil, 50g rosemary, 4 dehydrated lemon wheels, 150ml vinegar, 200ml sugar syrup. Blend all this together for 5 minutes then fine strain and bottle (this keeps in the fridge).

ingredients
35ml Hope Mediterranean Gin25ml basil and rosemary shrubSoda and or tonic to serve
Garnish
Rosemary or basil sprig
Preparation
Stir the gin and shrub in a glass on ice. Top with soda water or with tonic (or half and half)
Serve
On the rocks, garnished with a sprig of rosemary or basil
